African Stew (veggie and kid friendly)

African Stew
2 c tomatoes .
2 c chick peas .
2 c carrots .
2 c peas
2 c raisins
1 c chopped onion
1 c chopped green pepper
2 T cumin
2 T paprika
1 T cinnamon

Cook onion and peppers in tomato sauce. Add spices.
Add remaining ingredients and simmer for 5 minutes.
Serve on couscous with harissa sauce if desired.

Harissa Sauce
1 c tomato paste
2 T lemon juice
2 cloves garlic crushed .
1 T crushed hot red pepper

Crush garlic & pepper in mortar and pestle.

2 c whole wheat couscous
2 c water .

Bring water to a boil. Add couscous. Stir and let sit 5 minutes
Statistically, just as a rule of thumb, two tablespoons of peanut butter a day produce a higher risk of death than living next to a nuclear power plant.

OMG! We had this for dinner tonight - w/o knowing you had posted this. But we can't eat couscous, so we have it w/bas. rice.
When we can't find peace in ourselves it is vain to look for it elsewhere.

Ahah! I'm totally making this next week, especially since we already have the Harissa in the fridge...we bought some from an African lady who runs a food stand at the brattleboro farmers market and it is wicked hot and wicked good.
