Jen's Pumpkin Bars w/ Cream Cheese Frosting

PUMPKIN BARS

2 cups sugar
1 can (15 or 16 oz) pumpkin
¾ cup salad oil
4 eggs
2 cups flour
2 teasp baking powder
1 teasp baking soda
2 teasp cinnamon
¼ teasp ground cloves
½ teasp salt

Combine sugar, pumpkin, & oil; beat well (must be beaten well or will separate when baked). Add eggs, one at a time. Stir together flour, baking powder, baking soda, cinnamon, cloves, and salt. Add to creamed mixture. Bake in greased jelly-roll pan, 15 ½ x 10 ½ x 1 inch, in preheated 350 degree oven 30-35 minutes. Do not overbake! Cut in squares of desired size after frosting with cream cheese frosting.

CREAM CHEESE FROSTING

1 large (8 oz) pkg cream cheese
1 stick (1/2 cup) margarine
1 teaspoon vanilla
1 box (1 lb) confectioners’ sugar (equivalent to 3 ½ cups)

Cream the cream cheese and margarine together in small mixer bowl. Add vanilla. Beat in confectioners’ sugar until frosting is smooth and well blended. Spread evenly over the bars.

These bars freeze very well. If the pan doesn’t have a lid, place bars in freezer uncovered just until frozen, then cover with aluminum foil. When defrosting, remove aluminum foil as soon as you take them out of the freezer so the frosting doesn’t stick to the foil.
