1/2 large onion or whole medium size - chopped
6 cloves of fresh garlic - chopped
Small amount of olive oil
1 can crushed tomatoes w/green chilies
1 large can (32oz) crushed tomatoes
1 can each northern beans, kidney beans, black beans - all drained
1 can vegetables-all Cajun Style
1 bag frozen "fiesta style" vegetables (broccoli, beans, corn, etc)
1 bag frozen "stir-fry" vegetables (onions and colorful peppers)
About a palm full or 1 1/2 to 2 Tbsp ground cumin
About 2 Tbsp chili powder
Red Pepper flakes
Garlic - can use the dried chopped garlic or garlic salt - to taste
Seasoned Salt - can use other season salt brands - to taste
Pepper - to taste
Chop onion and garlic, then sauté in the olive oil.
Add canned vegetables then add the frozen vegetables.
Add all of the beans.
Add extra water to your desired consistency for chili.
Add cumin, chili powder, red pepper flakes, garlic, salt and pepper.
Cover and cook on medium heat for approx ½ hour.
