I found this in my Joy of Cooking yesterday, and we tried it this morning and all loved it.
Melt a few tbsp of butter in an ovensafe frying pan, such as cast iron (recipe called for 4, but I think I used half of that). Make sure butter goes up the sides of pan. Preheat oven to 425 F.
1/2 c. milk
1/2 c. flour (I used whole wheat and used a little less)
1/4 c. sugar
2 large eggs
Whisk together in a bowl. Add to frying pan, cook 1 min on stovetop, then place in oven 12-15 minutes. Sprinkle with powedered sugar and serve immediately with jam or berries (ok we did both).
Tastes somewhere between french toast and pancake, and yet something different. Most importantly, my kids ate it. Next time I might try cinnamon sugar.
