Bunch of chicken, bone in (can cut up a fryer, or just use parts - I liked the legs/thighs that our hfs had) - about 2 lbs.
1/2 cup brown sugar
1 onion, cut into big chunks
1/3 cup balsamic vinegar
1/3 cup red wine vinegar
dash of salt
dash of pepper
dash of lemon juice
1/4 cup water or broth (enough to cover the chicken)
Add all this (uncooked) to crock pot and cook on high for 3 hrs.
Add:
3 cut up carrots
1 can white beans
1 28 oz can diced tomatoes (fire roasted were yummy!)
I also added 1/2 bag of fresh spinach which was delish!
Cook on high 1-2 more hrs.
Serve over rice, or with noodles.
