Spinach & Artichoke Dip
·2 – 8 oz packages of cream cheese (I use light)
·1 tub of sour cream (I use light)
·1 ½ cups light mayo (the regular mayo makes it too oily)
·½ cup chopped green onion
·½ cup parmesan cheese (I use parmesan/romano blend)
·1 box frozen chopped spinach (thawed and drained)
·3 heaping tsp minced garlic
·1- 12 oz can artichokes chopped and drained (I use a 16oz can)
Soften cream cheese, then add sour cream and mayo. Mix in onion, parmesan cheese, & garlic, followed by spinach and artichokes.
Heat oven to 350 degrees. Bake for approx. 40 minutes (stirring occasionally). May also heat in a crock pot for 1-2 hours stirring every 30 minutes.
