Jen's Banana Bars w/ Cream Cheese Frosting

BANANA BARS

2 ½ cups flour
1 2/3 cups sugar
1 ¼ tsp. baking powder
1 ¼ tsp. baking soda
1 tsp. salt
1 ¼ cups mashed bananas
2/3 cup buttermilk
2 eggs
2/3 cup vegetable oil


1. Sift dry ingredients into a large mixing bowl
2. Add mashed bananas and 1/3 cup buttermilk. Blend together with electric mixer on low speed; then beat 2 minutes at medium speed.
3. Add remaining 1/3 cup buttermilk, eggs, & oil. Beat 2 minutes longer at medium speed.
4. Spread batter in greases jelly-roll pan (10 ½ x 15 ½).
5. Bake for 20-25 minutes at 350 degrees or until done (top will spring back when touched lightly). Cool on rack and top with Cream Cheese Frosting. Evenly score into 6 sections the length & width of pan; then cut into 36 bars.


CREAM CHEESE FROSTING

1 large (8oz) pkg. cream cheese
1 stick (1/2 cup) margarine
1 tsp. vanilla
1 box or bag (1 lb) confectioner’s sugar (powdered sugar)

1. Cream cheese and margarine together in small mixer bowl.
2. Add vanilla. Beat in confectioner’s sugar until frosting is smooth and well blended. Spread evenly over bars.
