Pepper and Potato Fritata
2 medium potatoes (I use two big ones, but just regular ole idaho organics work for me )
3 tbsp. olive oil
1 large onion, thinly sliced (I prefer diced)
2 garlic cloves, crushed (I double this am't)
2 peppers, one green and one red, thinly sliced (I use the frozen organic ones)
6 eggs, beaten
4 ounces sharp cheese, grated (I use goat cheddar)
salt and ground black pepper
Wash and boil potatoes for about 10 minutes. Drain and slice thickly. Preheat broiler.
In a large non-stick or well seasoned frying pan, heat the oil and fry the onion, garlic and peppers over moderate heat for 5 minutes or until softened. Add potatoes and continue frying, stirring occasionally until the potatoes are completely cooked and the vegetables are soft. Add a little extra oil if necessary.
Pour in half the eggs and sprinkle with cheese. Add remaining egg, salt and pepper. Finish with a layer of cheese.Continue cooking over low heat without stirring. Half covering the pan with the lid will help set the eggs.
Place under broiler just long enough to seal the top. Cool in the pan for a few minutes before turning out.
