Couscous with Feta Cheese and Red Onion (quick side dish)
1 package couscous (5.7 oz) –Recommend garlic/olive oil variety
1 tsp olive oil
1 small red onion (chopped)
3 tablespoons crumbled feta cheese
2 tablespoons sliced toasted almonds
1. Cook couscous according to package directions.
2. Heat olive oil in non-stick skillet.
3. Add red onion and cook until tender.
4. Fluff couscous with fork; add onion, feta cheese, and almonds.
