Thai Chicken Stir Fry Salad (from Pampered Chef)

Dressing:
¾ cup creamy poppy seed salad dressing
2 garlic cloves (pressed)
Ginger to flavor (fresh or dry spice)

Chicken Mixture:
1 lb chicken (cut into ½ inch cubes)
¼ cup snipped basil leaves
¼ cup chopped peanuts

Salad Mix:
6 oz bag of fresh baby spinach leaves
12 oz bag of broccoli slaw mix
1 medium cucumber (sliced)
1 small red bell pepper (sliced thin)

1. Heat chicken over medium-high heat then add basil and peanuts.
2. Combine salad mixture in a large bowl then add chicken mixture.
3. Top with dressing.
