Cheesy Potato Casserole w/ Campbell's Cream of Chicken

Cheesy Potatoes

Ingredients:
·2 lbs. hash brown potatoes (thawed about 15 minutes)
·1/2 c. chopped onion
·1/2 c. margarine (optional)
·1 tsp. salt
·1/2 tsp. pepper
·1 c. grated sharp cheddar cheese
·1 can cream of chicken soup
·1 c. sour cream

Mix all ingredients and bake uncovered in a 9" x 13" pan at 350 degrees for 45 minutes. Top with shredded cheese, or parmesan cheese, or french onion rings. Bake for an additional 15 minutes.

(This was the original recipe as found on the internet. I top with the shredded cheese right at the beginning, so it gets slightly crunchy and brown.)
