Salads and Dressings

Dressing for Strawberry Avocado Salad

2 Tbs white sugar
2 Tbs olive oil
4 tsp honey
1 Tbs cider vinegar
1 tsp lemon juice
2 cups salad greens
2 Avo pitted, sliced
10-12 strawberries quartered and destemmed
OPTIONAL: 1/2 c chopped pecans or walnuts

1. In small bowl, whisk together sugar, oil, honey, vinegar, and lemon juice. Set aside
2. Place salads greens in serving bowl. top with avo and strawberries. Drizzle dressing on top. top with nuts if desired. Refridgerate up to two hrs. or serve immediately.

really?? avos and strawberries??? together??? tell me this is yummy. our avos are starting to fall and we always need things to do with them.

Karen, I've been taking salsa and making guac and adding a can of black beans and calling it lunch...

well avo and beans is totally normal, IMO. but strawberries and avo?? odd. last year when the avos were so aplenty, my friend made a chocolate pudding pie, with avo as the thickener.
i'll try it next time we get some strawberries. the ones that they grow here are just fabulous. we've been eating tons of them. just gotta get them at farmer's mkt

Karen - this was my one EVERYONE can (and will, damnit) eat it dish - between no nuts, no soy, no dairy, no wheat it was a challenge. Anyway, the kids ALL loved it, and it was GONE in a flash. Not a fleck of strawberry seed to be had. :lol The lemon really binds the flavors well.

I made a yummy salad yesterday, thought I'd share it.

1 bunch (10 or more ish) grape or cherry tomatoes, halved
1 lrg. tomato (hierloom is nice) cut into bite size pieces
1 avocade cut into bite sized pieces
some crumbly feta cheese
1/2 cuke cute into bite size pieces
One small handful of pine nuts

Mix all together

Sprinkle on a bit of vintage balsamic vinegar. Add a dash of salt and pepper each, toss, and VOILA! Totally yummmmm.

I think there are a TON of possibilities for altering this recipe - adding fruit like figs, raisins, grapes, chopped apricot or plums would be awesome. The feta is tangy, the vinegar tart, the tomato and avo sweet and easily mix with other sweet flavors.
