African Stew
2 c tomatoes .
2 c chick peas .
2 c carrots .
2 c peas
2 c raisins
1 c chopped onion
1 c chopped green pepper
2 T cumin
2 T paprika
1 T cinnamon
Cook onion and peppers in tomato sauce. Add spices.
Add remaining ingredients and simmer for 5 minutes.
Serve on couscous with harissa sauce if desired.
Harissa Sauce
1 c tomato paste
2 T lemon juice
2 cloves garlic crushed .
1 T crushed hot red pepper
Crush garlic & pepper in mortar and pestle.
Couscous:
2 c whole wheat couscous
2 c water .
Bring water to a boil. Add couscous. Stir and let sit 5 minutes
