*cut it into stir frys
*broil it
*bake it w/a spelt/spice coating
*make it into curry (variations inc. sweet w/currants and raisins, spicy w/cayenne and paprika, mild with curry paste and coconut milk, and add-ins inc. garbanzos, tomatos, zucchini, eggplant (sauteed or steamed and seasoned), peas, green/string beans, broccoli florets, carrot rounds, grated veggies, actually just about every type of veg. except the really sid-dishey ones like artichokes and brussle sprouts)
*Pad Thai chicken
*Chicken w/black bean sauce
*Lemon/zesty chicken (kind of like sweet and sour, but less prep intensive, equally flavorful)
*chicken Parm.
*Chicken and pasta of various sorts
*drumsticks versus breast done any or all of above...
then the soups, stews and casseroles, which I'm not including here only because they sort of no longer are just a chicken thing, but a whole other beast, really...
Can you tell we eat a lot of chicken? We support free range chicken farmers the world over in our home. And darned proud of it

ps: The only thing Idon't love is chicken salad...
