Andy's Pasta Sauce

I make this BIG and freeze it in 2 parts, and use one part immediately (each part is enough to feed 4-6 people)

2 onion (yellow) diced.
several large cloves of fresh garlic, chopped.
1 lb+ turkey ground
1 lb+ beef or pork ground
1 Tbs - 1.5 Tbs cumin
1 can roma tomatoes whole peeled
1 can crushed tomatoes
2 fresh tomatoes
dried oregano (big pinch)
dried thyme (little pinch)
dried rosemary (little pinch)
fresh pepper
salt (about 1 Tbs but if it's sea salt a bit less)
1 shreaded zuchini

saute onion until clear and starting to golden. Add garlic. When garlic is browning, add meat. Brown together till meat is cooked. Add spices. Mix well. Add canned tomatoes. Cut the whole tomatoes in the pan so they're not too big of a chunk. Dice up fresh tomatoes and add. Let it all cook together for a while, adding some water or broth if needed. I usually let it go for about 20-30 min. uncovered and then reduce heat and cover it. You can add other stuff - whatever you like. I often put flax meal in, because it all but dissolves and you get at least a bit of goodness, puree additional zuchini and add them, or puree eggplant and use that. VERY flexible.
When we can't find peace in ourselves it is vain to look for it elsewhere.
