Caramelized Baked Chicken
Prep: About 5 min, Cook time, 45 min.- 1 hour
Ingredients:
3 pounds chicken wings ; 2 tbs. olive oil; 1/2 cup soy sauce; 2 tbs. ketchup; 1 cup honey; 1 clove garlic, minced ; salt and pepper to taste
Grease 9x13 pan and preheat oven to 375 degrees. Place chicken in bottom of dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken. Bake for one hour, or until sauce is caramelized. After the hour i usually put the broiler on for a few minutes just to burn them on the top a little(it's just the way i like them, you don't have to do it.) Just so youknow I have never really had this chicken carmelize, however it doesn't matter. It is awesome with the sauce. We eat it on top of white rice like as if it were a chinese dish.
FWIW--I used the frozen boneless, skinless chicken breasts (I hate bones) and it was great. I just put them in the pan frozen and upped the temp by 10 degrees and it was still done in 45 minutes.

Chicken Burritos
3 large cans of chicken, drained or 5-6 chicken breasts cubed
3 cans cream of chicken soup
2 can rotel (3 if you like extra spice)
1 cup chopped onion
tortilla chips
grated cheese
tortillas
Saute onion and chicken (I'll probably skip this next time when I use canned chicken). In a bowl, mix chicken, soup, rotel. Cover the bottom of a 9x13 pan with crushed tortilla chips (I'll probably skip this next time, too. It didn'y really add anything IMO). Pour the mixture evenly in the pan. Cover the top with grated cheese. Bake at 350 for 30 minutes. When done baking, put in tortillas and eat burrito style.
I also made rice and corn to go with it. It would actually be really good with corn in the mixture, too. It makes a ton. I'm froze a bunch of it to eat later. We'll probably get 3-4 meals out of it.
