Oh sure! I especially like the potato skin idea... yum! Ooooh, you know another way they'd be great? Put a tablespoon or so of filling in a wonton wrapper, and make little potstickers with them! Just bake 'em in the oven or skillet-fry them. I just might have to try both of these ideas soon....
